Mocha Banana Protein Pancakes

Sunday morning is pancake morning in our house. We sleep in…a little, and then while Pete takes the pooch for a walk, I get the pancakes and French press going. While I’m not usually a fan of chocolate in the morning, these Mocha Banana Protein Pancakes may have changed my mind. They are bitterly decadent from the coffee, and slightly sweet from the thin slices of banana, and topped with the coffee yogurt (recipe below) they are seriously to.die.for. Don’t like banana, I have also made these with frozen bing cherries, and they were amazing! Like black forest cake for breakfast. So, tomorrow’s Sunday…are you having pancakes?

Mocha Banana Protein Pancakes

1 ¼ cup oat flour
2 Tbsp. unsweetened cocoa powder
1 scoop chocolate protein powder (I used whey)
1 tsp. cinnamon
1 tsp. baking powder
¼ tsp. salt
1 egg, lightly beaten
3/4 cup almond milk, slightly heated
1 Tbsp. instant coffee
¾ cup unsweetened applesauce
1 small banana, thinly sliced
1 tsp. coconut oil, for cooking

Lightly whisk the egg in a small bowl. Set aside.

In small saucepan heat the almond milk over low heat. Add the instant coffee and whisk until dissolved. Mix together the oat flour, cocoa, protein powder, cinnamon, baking powder, and salt in a medium bowl.

Add the egg, warm milk/coffee mixture, and applesauce to the dry ingredients and mix. If the batter seems too dry add more milk, if it seems too wet, add more oat flour 1 tablespoon at a time. (The texture will vary depending on the type of protein powder that is used)

Heat a non- stick skillet over medium low heat, and add a 1 tsp. coconut oil. Drop ¼ cup of the batter into the pan and scatter the banana slices throughout the pancake. When the edges start to look dry, flip, and cook just until done on the other side.

Keep the finished pancakes warm in the oven on preheat while you are cooking the other cakes.

Serve these delicious pancakes with CoffeeYogurt; recipe below.

Coffee Yogurt

1 cup plain lowfat yogurt (Greek yogurt would work too)
1 Tbsp. instant coffee (this makes it pretty strong, so use less if you don’t love coffee…but who doesn’t love coffee am I right?)
2 tsp. almond milk (if you use Greek yogurt, you’ll want a little more milk to make it runny)
5-6 drops vanilla liquid stevia

Mix together in a bowl and drizzle over the warm Mocha Banana Pancakes! Yum!!
