Pear Spice Baked Oatmeal

Happy Monday!

Here is a quick and healthy breakfast recipe for you to try this week! This is my favorite version of my quick baked oatmeal recipe yet!

PEAR SPICE BAKED OATMEAL

1 c. rolled oats
1/4 c. oat bran
1 scoop vanilla protein powder (if unsweetened make sure you add some sweetener to this recipe)
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. baking spice (blend of cinnamon, cardamom, allspice, anise, & mace)
1/8 tsp. cloves
1 pear, chopped chunky in cubes
1/4 c. hazelnuts chopped

1 Tbsp. coconut oil, melted
1 Tbsp. pure maple syrup
1/2 c. unsweetened applesauce
1 egg
1/4 c. almond milk
1 tsp. vanilla extract

Preheat your oven to 350 degrees.

Combine all your dry ingredients through the pears and hazelnuts in a medium bowl. Stir until well combined and the pears are coated  with the oats and spices.

Combine all the wet ingredients oil through to the vanilla extract in a small bowl. Whisk to combine. Add the wet to the dry and stir until just mixed. If your batter seems extra thick add some more almond milk. The consistency of the batter will depend on the protein powder that you use…all of them act just a little differently. Pour the oatmeal mixture into a small casserole dish.

Bake at 350 for about 15- 20 minutes. Enough time to take your shower. At least that is what I did.

Enjoy this tasty, fall flavored oatmeal with some almond milk, or plain yogurt and a drizzle of almond butter. AH….I’m drooling just thinking about it.
